Vegetable Bacon Parcels

Pretty little festive packages of vegetables tied up with bacon for your special occasion. Easy to make yet so elegant.

Sure to be a crowd-pleaser!


Ingredients:

  • 1 pound parsnips, peeled and cut into long spears

  • 1 pound baby carrots cleaned and trimmed

  • 1 pound green beans, trimmed

  • 1 tablespoon extra-virgin olive oil

  • 10 slices thick-cut bacon (pastured-raised: ie. Applegate)

  • Fine sea salt and freshly ground black pepper

Instructions:

  • Preheat oven to 425F. Line a baking sheet with parchment paper.

  • Combine the parsnips, carrots, and green beans in a bowl and toss with the olive oil. Divide the vegetables into 10 bundles and wrap each tightly with a strip of bacon. Place the bundles, seam side down, on the prepared baking sheet. Sprinkle with salt and pepper.

  • Roast for 20 minutes, or until the vegetables are tender and the bacon is crisp. Transfer to a plate lined with paper towels to drain briefly, then remove the towels and serve hot.

Make It Ahead: Assemble the parcels up to 2 days in advance and store in an airtight container in the refrigerator. Bring to room temperature prior to roasting.
