Cozy up with this easy Butternut Squash Soup! ✨

Here’s the full recipe:


Ingredients:

  • 1 cup mirepoix (carrot, celery, onion mix)

  • 3 cloves garlic, minced

  • 4 cups butternut squash, peeled and cubed

  • 1 bundle fresh thyme & parsley (tied with kitchen twine)

  • 4 cups chicken broth (or veggie broth for a vegetarian option)

  • 1 tsp salt (adjust to taste)

  • 1/2 tsp black pepper





Directions:

1️⃣ In a large pot, sauté the mirepoix in olive oil or butter until softened.

2️⃣ Add minced garlic and cook for another minute until fragrant.

3️⃣ Toss in the butternut squash cubes and stir to coat with the aromatics.

4️⃣ Add the thyme and parsley bundle, then pour in the chicken broth.

5️⃣ Season with salt and pepper, bring to a boil, then reduce heat to a simmer.

6️⃣ Cook until the butternut squash is tender (about 20-25 minutes).

7️⃣ Remove the herb bundle and blend the soup using an immersion blender or in batches in a blender until smooth.

8️⃣ Adjust seasoning as needed and enjoy warm!
