As the days grow longer and warmer, there’s something refreshing about lightening up what’s on our plate. Spring is a beautiful time to reset—not just our routines, but also the way we nourish ourselves. This Bright Spring Salad is one of my go-to recipes for doing just that.


It’s full of vibrant, seasonal ingredients that not only taste amazing but also support digestion, hormone balance, and energy. Think crisp radishes, creamy avocado, crunchy pistachios, and fiber-rich chickpeas: all tossed together with tender asparagus and peas on a bed of greens.





Bright Spring Salad Recipe

Ingredients:

  • 1 bunch asparagus, tender parts chopped into 1-inch pieces

  • ½ cup frozen peas, thawed

  • A few handfuls of mixed salad greens

  • 2 radishes, thinly sliced

  • ½ avocado, pitted and diced

  • ½ cup crumbled feta cheese

  • ¼ cup chopped, toasted pistachios

  • ½ cup roasted chickpeas

  • Fresh herbs for garnish (basil, mint, and/or chives)

  • Sea salt and freshly ground pepper, to taste


Instructions:

  1. Lightly steam, sautéed, or blanch the asparagus until just tender, then rinse with cold water to stop the cooking process.

  2. In a large bowl or platter, arrange salad greens, asparagus, peas, radishes, avocado, and feta.

  3. Top with pistachios and roasted chickpeas.

  4. Garnish with fresh herbs and season with sea salt and freshly ground pepper.

  5. Drizzle with a simple olive oil and lemon dressing or your favorite light vinaigrette.
