Purple Cabbage Slaw With Creamy Tahini Dressing

Ingredients:
· 3 cups purple cabbage, shredded
· 1 cup carrots, shredded
· ½ cup cilantro, chopped
· ½ cup green onions, chopped
· ¼ cup sunflower seeds (or slivered almonds/pumpkin seeds)
Dressing:
· 4 tbsp tahini
· 2–3 tbsp fresh lemon juice (or apple cider vinegar)
· 1–2 tbsp water (start with 1 tbsp, add more to adjust consistency)
· 1 tbsp maple syrup
· 1 garlic clove, minced
· ¼ tsp salt
· ¼ tsp pepper
· ¼ tsp ground cumin
Directions:
1. In a large bowl, combine cabbage, carrots, cilantro, green onions, and sunflower seeds.
2. Whisk dressing ingredients in a separate bowl. Adjust seasoning to taste.
3. Pour over slaw and toss well. Let sit 10–30 minutes to blend flavors.
Refrigerate leftovers for 2–3 days. Enjoy!
